# A loaf worth the two-day wait

This is the loaf the shop is built on. It asks for almost nothing but your patience, and it gives back more than any recipe with twice the steps.

## The method

1. Friday evening: feed the starter and go to bed.
2. Saturday morning: mix flour and water, rest one hour, then add starter and salt.
3. Saturday: four gentle folds across four hours. Shape at night, into the fridge.
4. Sunday morning: bake hot, lid on for twenty minutes, lid off for twenty more.

Two days, four minutes of actual work, one loaf that will ruin supermarket bread for you forever. That is the trade, and it is a good one.
