It is written between the morning and afternoon bakes, usually with flour still on the keyboard. Expect recipes you can actually make, honest notes on what went wrong, and a slow argument that bread is mostly patience wearing an apron. ### Membership URL: https://astrix-proof.adrianoamalfi.com/membership/ Last updated: 2026-07-20T18:13:57.000Z The bakery only has so many seats, but The Proof Club has room for everyone. Members get every recipe the moment it is written, the members-only Sunday letter, and the seasonal baking calendar we plan the shop around. Your first bake is on the house — start free, upgrade when the smell of the shop gets to you. ## Posts ### A short defence of the humble bun URL: https://astrix-proof.adrianoamalfi.com/a-short-defence-of-the-humble-bun/ Last updated: 2026-07-20T18:13:58.000Z The sourdough gets the photographs. The bun gets the lunchboxes, the last-minute guests, the Tuesday that got away from you. It is soft, quick, endlessly adaptable, and completely unbothered by your ambitions. Respect the bun. It has fed more people than any showpiece loaf ever will. ### Salt, time, temperature URL: https://astrix-proof.adrianoamalfi.com/salt-time-temperature/ Last updated: 2026-07-20T18:13:58.000Z Forget the gadgets. Bread has three dials: how much salt, how much time, how much heat. Learn what each one does and you can bake anything; ignore them and no amount of equipment will save you. Salt slows and seasons. Time builds flavour and structure. Temperature decides the crust. That is the whole science, minus the parts you can feel with your hands. ### Sunday notes: the shop at five a.m. URL: https://astrix-proof.adrianoamalfi.com/sunday-notes-five-am/ Last updated: 2026-07-20T18:13:57.000Z The best hour of the week, before anyone else is awake. A members-only letter from the bakery. _This post is for subscribers only._ ### Members' recipe: rye and caraway URL: https://astrix-proof.adrianoamalfi.com/members-recipe-rye-and-caraway/ Last updated: 2026-07-20T18:13:57.000Z Dense, dark, and built to last a week. The full recipe, for the Proof Club. _This post is for paying subscribers only._ ### What to bake in the last week of autumn URL: https://astrix-proof.adrianoamalfi.com/what-to-bake-in-the-last-week-of-autumn/ Last updated: 2026-07-20T18:13:57.000Z The last week of autumn is the best week in the bakery. The squash is sweet, the walnuts are new, the apples are on their way out and taste like they know it. Everything wants to be baked at once. Bake the walnut loaf. Bake the apple thing you never write down. Bake more than you can eat, and give the rest away — that is what the season is for. ### Keeping a starter alive through winter URL: https://astrix-proof.adrianoamalfi.com/keeping-a-starter-alive-through-winter/ Last updated: 2026-07-20T18:13:57.000Z A starter is a pet that eats flour and holds a grudge about temperature. In winter, a cold kitchen slows it right down, and a slow starter makes a flat loaf. We keep ours near the oven, feed it a touch more often, and use a little warm water in the mix. Treat it well and it will outlive the winter — ours has seen eleven of them. ### A loaf worth the two-day wait URL: https://astrix-proof.adrianoamalfi.com/a-loaf-worth-the-two-day-wait/ Last updated: 2026-07-20T18:13:57.000Z This is the loaf the shop is built on. It asks for almost nothing but your patience, and it gives back more than any recipe with twice the steps. ## The method 1. Friday evening: feed the starter and go to bed. 2. Saturday morning: mix flour and water, rest one hour, then add starter and salt. 3. Saturday: four gentle folds across four hours. Shape at night, into the fridge. 4. Sunday morning: bake hot, lid on for twenty minutes, lid off for twenty more. Two days, four minutes of actual work, one loaf that will ruin supermarket bread for you forever. That is the trade, and it is a good one.
